Christmas N July Cookies





 

I've had a hankerin' for some homemade
cookies lately and the boys have been asking
to make some, so we finally got around to it.



Turned out to be the best recipe ever - so I thought
I'd share it with you.

Back at Christmas time- I made up a new recipe for cookies that we named the
"Spirit of Christmas" cookies. These are a summertime version of those
(sans nutmeg and "Christmas" spices)
 So. . . . . after a little bit of argument tears fighting fit pitching   discussion -
 we settled on "Christmas in July" cookies- cause these are just that good!

It's my take on an old classic- Hope you like em'!

I photographed the process and then wrote out the recipe so you can print it below.


First you cream your butter and sugar smooth.


Then, you add your egg and vanilla and
continue to blend until even smoother!


You mix your dry ingredients in a seperate bowl.


Add a big heapin spoon full of flour mixture at
a time to the butter mixture and blend.


So far, it's a regular 'ole classic sugar cookie.
Can I get a drum roll please?

Now you add 2 spoons of cream cheese
And a cap full of lemon extract!  


You know the drill. . . . blend away.
Then ya add them by the spoon full to the tray
and pop them into a hot oven.


About 6 minutes into your 9 minute cook time
you just have to peek
(well, I do anyway) 


Let your cookies cool on the tray.


Then, when they are no longer "melty"
you can add them to the cooling rack
and sprinkle them with powdered sugar!


Fix yourself a big glass of milk and enjoy!

This is a great way to share time in the kitchen with your kids
You can even teach them a little kitchen math while you're at it!

Ingredients
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 tbs cream cheese
  • 1 cap full of lemon extract

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
  2. In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Add 2 heaping tbs cream cheese, add lemon extract and blend until smooth. Scoop rounded tablespoons of mixture and place onto ungreased cookie sheets.
  3. Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.
