Homemade Cinnamon Rolls
Recipe from Better Homes and Gardens Cookbook Circa 1960
Basic Roll Dough:
1 package active dry yeast or 1 cake compressed yeast
1/4 cup water
1 cup milk, scalded
2 tbs shortening
2 tbs sugar
1 tsp salt
1 well- beaten egg
3 1/2 cups sifted flour
(healthy options - use turbinado or organic raw cane sugar - I use non-bleached flour)
Add active dry yeast to warm water, Combine scalded milk, shortening, sugar, salt; cool to lukewarm.
Add softened yeast, egg. Gradually stir in flour to form soft dough. Beat vigorously; cover and let rise in warm place until double in size (about 2 hours).
Roll 1/2 recipe Plain Roll Dough on lightly floured surface to rectangle 1/4 inch thick.
Brush with 2 tbs melted butter; sprinkle with mixture of 1/4 cup sugar, 2 tsp cinnamon
Carefully roll it up (not too tight); seal edge; cut in 1 inch slices
Place cut side down in greased baking pan (or cookie sheet); cover and let rise till doubled in size
Bake at 375 degrees for 25 minutes; Remove from pan; cool and frost with cream cheese icing
or Confectioners' Icing
Cream Cheese Frosting:
1 3oz packages cream cheese
1 tbs milk or cream
2 1/2cups sifted confectioners' sugar
1 tsp vanilla
*soften cheese; blend in milk; stir in sugar; add vanilla; blend well
(this recipe give enough icing to do both halves of dough for cinnamon rolls)
Confectioners' Icing:
2 cups powder sugar
add sufficient milk to make spreading consistency - add dash of salt and 1 tsp vanilla

I'm drooling ;) These are definitely going on the list to make. cinnamon rolls are a big hit here but I have never tried homemade ones. I think it's a must try now :)
