Our recipe this week:
Clam Chowder
Ingredients:
1 large can chopped clams (or fresh)
1 can cream mushroom soup
chopped mushrooms
1 chopped onion
pepper to taste
6 -8 teaspoons of flour for thickening
chopped potatoes
stick butter
4 - 6 cups milk
Directions:
Get your little helpers to chop potatoes (we use some left over potatoes mixed with fresh) - chop onion
Add stick of butter to large pot on stove - when it melts - add onion and cook on low until translucent -
add potatoes on top of those.
Drain clam juice into separate bowl - reserving juice for later - add clams to pot simmer for about 5
minutes. Add 1/2 reserved clam juice to pot along with can of cream of mushroom soup & chopped mushrooms.
Heat on medium for about 5 more minutes. Begin adding 1 cup of milk at a time and rest of clam juice.
Stir as you heat it through between each cup being added.
Keep it moving - stir well. Thicken with flour. Use separate bowl to remove a bit of liquid from chowder
add teaspoon or two of flour and stir until mixed without lumps - then add to chowder. Pepper to taste.
Continue to thicken by repeating with flour until desired thickness is reached.
Everybody get's a taste - just to make sure it's perfect. (Using different spoons of course)
Serve with yeast rolls and expect rave reviews from the rest of the crew!!!

OH, that's a way to make clam chowder that won't break the bank....definitely have to try it soon!
