Family taco night is a favorite in our house. It's an easy - and even kind of a "cheat" in the homemade category - but we really enjoy it. I buy a big container of the taco seasoning at Sam's club to have on hand. Then I pick up shells when they go on sale - or use corn tortilla's cooked to a crisp in the oven.
We add re-fried beans, sometimes homemade from dry pinto beans slow cooked on the stove.
(and sometimes from a can - just don't tell anyone)
Even the youngest children can help place shells or tortilla's on a cookie sheet. Our kiddos love using the slap chop to cut onions - and also the cheese grater. Our oldest can carefully use a big boy knife to chop lettuce. I stand beside my 7 year old as he enjoys stirring the meat and adding the seasoning.
Other toppings include tomato, black olives, sour cream, and guacamole or plain avocados!
We like green beans as a side dish or corn on the cob! The meal is tasty and fun - but the fact that every time I say "Taco night" the boys seem to think it's a party - is the best part! Enjoy your family dinners this week!
