Kids in the Kitchen : weekly recipe link up - chicken soup

I join forces with my good friend Carrie @YoungLivingOilLady each
week to bring you this family friendly recipe link up. It is our desire to
encourage families to cook and eat together. Meals cooked at home
are healthier, and time spent together in the kitchen is good for families!


We use Cooking 101 as part of our family homeschool. I’m teaching
the boys to put together healthy family meals, life skills, and budgeting,
as well as teaching them tips for cooking in the kitchen.We encourage real food vs. processed food. Let’s bring the family, back to the table!




Homemade chicken soup is something we make frequently at our house. Instead of buying store bought broth or using bullion full of preservatives and junk, we make our own stock.

We love to use chicken bones, but this week, we only had boneless chicken available from the freezer. We threw 3 big pieces into a pot of water and let it boil. We added garlic, black and red pepper and a bit of salt for flavor. We also like to add celery stalks, but again didn't have any.

The boys went to work chopping up the veggies we had on hand:

 

They chopped potatoes, onions, and carrots with regular kitchen knives
we pretend they are as sharp as regular ones - to practice for the real thing



Once the chicken was cooked through, I pulled it out of the pot and, when cooled, pulled it apart. The boys demonstrate their technique in the picture left.


I added the veggies to the pot and cooked until soft and tender then added the pulled chicken.

It makes for a hearty, healthy, meal! You can make a lot of different varieties of soup from a basic broth such as this. From thick stews, to summer veggies - a basic broth is a great starting point.

Kids in the Kitchen - Nothing says summer celebration like watermelon - fruit kabobs

From the archives: 

Kids can use an ice-cream scoop or a coffee scoop to dig out watermelon balls
Use regular wooden skewers and let them put apples, grapes and other fruits on the sticks to make their own kabobs. Plain yogurt mixed with honey makes a nice dip for the fruit!

Kids in the Kitchen - some of our favorite recipes!

This week:

We are on the road! Traveling for Teach Them Diligently. We carry food with us to eat as many healthy meals as possible and to make traveling more affordable.

Kids in the Kitchen - Chicken noodle casserole

Chicken noodle casserole: 


Cook a pot of egg noodles, or another favorite -  boil chicken strips in separate pot of water 
Cut fully cooked chicken into bite size pieces - Make homemade frugal cheese sauce (Recipe Here) 
Drain noodles and add chicken and cheese sauce - stir together, put into casserole dish 
Top with crunchy onions (Durkey) - brown in oven at 350 degrees 


Onions and broccoli or other veggies can easily be added to this casserole 
 gluten free noodles can be substituted for egg noodles if needed 

*TIP - our little guys use regular table knives to chop onions and veggies. They are learning to 
treat them as if they are very sharp. When the time is right - they will be well practiced.
 Adult supervision is always important in the kitchen with kiddos!
