Simple Summer Suppers: #kidsinthekitchen

I join forces with my good friend Carrie @YoungLivingOilLady each
week to bring you this family friendly recipe link up. It is our desire to
encourage families to cook and eat together. Meals cooked at home
are healthier, and time spent together in the kitchen is good for families!
We use Cooking 101 as part of our family homeschool. I’m teaching the boys to put together healthy family meals, life skills, and budgeting,as well as teaching them tips for cooking in the kitchen. We encourage real food vs. processed food.

Let’s bring the family, back to the table!

Simple Supper ingredients:

London Broil Steak 
Watermelon 
green peppers 
white onions 
(you can add mushrooms, raw carrots or whatever veggies your family enjoys- just keep it simple) 
spices to taste: garlic, blackened seasonings 



Keep summer cooking simple by using very basic few ingredients, the fresher, the better. 
Get the kids involved: 
  • tenderize the meat with a large fork 
  • slice onions and peppers into smaller pieces with a table knife (with supervision of course)
  • sprinkle on seasonings (pour them into a separate bowl and let kids add them from there so they won't use more than you need)  


Grill or broil steak according to your preference & slice thin on a diagonal 
(under the broiler at 500 degrees - cook each side for 5 - 6 minutes for rare steak) 

Cook onions and peppers in pan with a Tbs. of coconut oil - salt & pepper to taste 

Serve fresh slices of watermelon on the side! 

I am sorry - I don't have a picture of the finished results. It was so good, we jumped in & it was GONE before I realized I hadn't grabbed the camera. Delicious!

Kids in the Kitchen - Summer Supper: Beans and Rice


Each week I join forces with my good friend Carrie @YoungLivingOilLady

to bring you this Kids in the Kitchen family recipe link up - We are all about encouraging
families to cook and eat together. Real food, verses the fake processed stuff is always best.
We believe that food is healthier and families happier when they get in the habit of spending time in the kitchen together. 

We use Cooking 101 as part of our family homeschool - teaching life skills and healthy habits 
to last a lifetime. The kids plan a food budget, meals, study nutrition and much more. 


This week: 



My son is ALMOST 12 years old, and at this stage he can cook dinner for the whole family. His little brothers are always handy to help chop or grate and to wash and peel. I love that they are learning these all important life skills including planning and preparing healthy food for themselves and for the family.
( I'm secretly hoping to make a good impression on their future wives, by training them to help out, so they will visit a lot!) 

We cook long grain brown or white rice according to directions 
*adding chicken broth to the water and a little coconut oil is very tasty

Kids in the Kitchen - Giant Homemade Reese's Peanut Butter Cups

Giant Homemade Reese's Peanut Butter Cups
Now THAT's REAL food! 



Our oldest son (almost 12) is away visiting cousins. This was their idea and their creation - thanks for the recipe Aunt Jill. Now y'all head to Florida and come make some with me!



They had a ball goofing off in the kitchen - even baby cousin was laughing (so cute) 
But THIS is NO joke - SERIOUSLY goooooood: 



Ingredients:
  • 18 oz chocolate chips
  • 3/4 cup creamypeanut butter
  • 2 tbsp butter, softened
  • 1/2 cup powdered sugar
  • 1 tbsp. granular sugar
 
Directions:
  1. Line a cupcake tin with paper cupcake liners.
  2. Melt chocolate w/ double boiler
  3. Spoon into the cupcake liners to make a thin layer of chocolate (for the bottom of the pnut butter cup)
  4. Put in freezer for 10-15 minutes.
  5. Whip the peanut butter, butter, powdered and granulated sugar together with a hand mixer.
  6. Spoon small amounts of pnut butter into each cup.
  7. Put in freezer for 10-15 minutes
  8. Spoon chocolate onto top to make the top of the pnut butter cup
  9. Shake your cupcake tin or bang it on the counter to make the pnut butter cups level out and gain proper shape
  10. Put in freeze for 15 minutes for final setting
  11. Enjoy!!!

Kids in the Kitchen : weekly recipe link up - chicken soup

Homemade chicken soup is something we make frequently at our house. Instead of buying store bought broth or using bullion full of preservatives and junk, we make our own stock.

We love to use chicken bones, but this week, we only had boneless chicken available from the freezer. We threw 3 big pieces into a pot of water and let it boil. We added garlic, black and red pepper and a bit of salt for flavor. We also like to add celery stalks, but again didn't have any.

The boys went to work chopping up the veggies we had on hand:

 

They chopped potatoes, onions, and carrots with regular kitchen knives
we pretend they are as sharp as regular ones - to practice for the real thing



Once the chicken was cooked through, I pulled it out of the pot and, when cooled, pulled it apart. The boys demonstrate their technique in the picture left.


I added the veggies to the pot and cooked until soft and tender then added the pulled chicken.

It makes for a hearty, healthy, meal! You can make a lot of different varieties of soup from a basic broth such as this. From thick stews, to summer veggies - a basic broth is a great starting point.
