Still scratching my head about what to do with all this leftover bird.
(I just can't stand to waste it!)
We often enjoy beans and rice with a little chicken, so...........
"Turkey Beans and Rice" was our creative hot lunch for today!
It was perfect for such a cold day-
Yesterday I went ahead and picked the bird clean & stored all the pulled turkey in the fridge.
It was perfectly easy to cook a bit of rice - can of beans (black beans or pinto)
Sprinkle with cheese (always) and if desired add some chunky salsa or pico de gallo and a dab of sour cream!
