recipe link up! We hope to encourage families to enjoy cooking and eating more together.
Homemade Potato Soup:
Chicken broth (either bullion or ready made) enough to fill 3/4 large pot full
6-8 medium sized white potato's peeled and chopped into bite size chunks
1-2 small to med sized onions chopped
1 small can (or fresh) organic sliced mushrooms
3-4 tbs of corn starch to thicken soup
salt and pepper to taste
garnish with grated cheddar cheese (and/or bacon)
directions:
Add peeled and chopped potato's to pot and bring to a slow boil in chicken broth
add onions and simmer for 30 minutes - add more water as needed to broth - add mushrooms
simmer for 15 minutes - add corn starch to small bowl and mix with broth then add to pot and simmer
another 15 minutes - pepper to taste - serve with bacon and/or grated cheese
Enlist little helpers to peel and chop potato's and onions for family dinner. Children can also grate cheese and slice mushrooms for soup. Our younger boys use regular kitchen knives to chop potato's and onions. We enjoy the time together in the kitchen - and they feel a real sense of accomplishment when they learn to use kitchen tools and help with the family dinner. What are you cooking?
