Kids in the Kitchen - Link up #43 - Florida Snowman Cookies


Each week I join forces with my good friend Carrie @YoungLivingOilLady
to bring you this Kids in the Kitchen family recipe link up - We are all about encouraging
families to cook and eat together. Real food, verses the fake processed stuff is always best.
We believe that food is healthier and families happier when they get in the habit of spending time in the kitchen together. 

We use Cooking 101 as part of our family homeschool - teaching life skills and healthy habits 
to last a lifetime. The kids plan a food budget, meals, study nutrition and much more. 

This week at our house: 




I saw a picture on Pinterest of these cute snowmen cookies and immediately knew we'd have to make some - It's only fitting - being that we don't get to enjoy snowmen in the far south
 - I promptly renamed them from "Melted Snowman"  to "Florida Snowman Cookies"
 - cause that just makes me happy 


INGREDIENTS:
  • 3/4 cup whole-wheat flour
  • 3/4 cup unsifted cake flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons butter
  • 1/2 cup unrefined sugar  or 1/2 cup Turbinado sugar 
  • 2 tablespoons canola oil
  • large egg 
  • 1 1/2 teaspoons vanilla extract 

INstructions: 
  1. Set a rack in the upper third of the oven; preheat to 350°F. Coat 2 baking sheets with cooking spray.
  2. Whisk whole-wheat flour, cake flour, baking powder and salt in a medium bowl.
  3. Melt butter in a small saucepan over low heat. Cook, swirling the pan, until the butter turns a nutty brown, about 1 minute, and pour into a mixing bowl. Add sugar (or Splenda) and oil; beat with an electric mixer until smooth. Mix in egg and vanilla; beat until smooth. Add the flour mixture and mix on low speed until just combined. Divide the dough in half and press each piece into a disk.
  4. Working with one disk at a time, roll dough on a lightly floured surface to a thickness of 1/8 inch. Cut out cookies with small (about 2- to 2 1/2-inch) cookie cutters. Place the cookies about 1/2 inch apart on the prepared baking sheets.
  5. Bake the cookies in the upper third of the oven, 1 sheet at a time, until slightly golden on the edges, 5 to 7 minutes. Do not overbake. Transfer to wire racks to cool.




Icing and decorations: 
 Mix powdered sugar with a few drops of milk and a splash of vanilla to a thick consistency that will slowly come off your spoon - while cookies are cooling yet still warm - add one small marshmallows to each then cover/ drizzle with icing - use food coloring to dab eyes and nose on your snowmen

*Prayer request*We are praying for Carrie's family - they just lost their new precious puppy and their second puppy has come down with the same virus. Carrie and the boys are heartbroken for the one they lost and are praying for little Amber to live - Monday night finds them at the emergency Vet's office - please pray for complete recovery of their little dog! We love you Carrie!

L is for . . . Leftover Turkey Casserole and Lavaca, AR

 If you don't know Marcy, you're gonna love her. She's  "down to earth" good people - I've had the privilege of knowing IRL for several years. She reached out to me, a stranger, when I was homeschooling alone in a different state. I needed help and information to get my boys on track while we worked our way through a tough year for our family. Her kindness and wisdom meant more than she knew. She has a heart for the Lord and a love for others. I'm fortunate to call her friend.

If you have a ton of turkey leftover - or even just a cup or two - you can turn it into this cheesy 
deliciousness.  I don't know about you, but I can hardly look at another slice of turkey - but this is 
a whole other animal (or so to speak).
