each week to bring you this Kids in the Kitchen link up. We use Cooking 101 as an important part of our homeschool and family life.
It not only provides good family time, but also teaches important skills which last a lifetime. Kitchen time offers kinesthetic learning in science, and math. It makes the study of history and geography more interesting as we cook food from around the world.
This week: Easy Enchilada's
Using simple ingredients from the shelf, combined with a few healthy additives makes
for an easy meal - the whole family will love.
Begin with tortilla's of your choice, and canned enchilada sauce (we buy whatever is on sale)
Cook chicken (pulled off the bone - we try to keep extra in the freezer from leftovers)
heat in skillet using a TBS of coconut oil for good health.
Pour half of the enchilada sauce over chicken, add to tortilla, add grated cheese, roll and
place in baking dish - pour small amount of sauce on bottom of dish, then layer rolled up
enchilada's across the bottom of the baking dish. Cover with rest of sauce and cheese.
Bake at 350 degrees for 15 minutes or until cheese is melted.
